¡Hola!

Just saying hi!

I know, I know. It’s been over a month since I posted. Not cool. But the reason for it is cool. This month I’ve been able to get in lots of traveling and vacation with friends and family. So, while I haven’t been cooking much lately during my travels, I have enjoyed some great meals.

One memorable meal was a beautiful sunset dinner with my mom in Dewey Beach, Delaware:

Another memorable meal was my new favorite breakfast, discovered and enjoyed while vacationing in Riviera Maya, Mexico. It’s Chilaquiles with scrambled eggs, black beans, chorizo and lime. Perhaps not just my new favorite breakfast, but my new favorite meal. I’ll definitely have to make this sometime. Here’s wikipedia’s description of chilaquiles – though the ones I had were not fried, they were just really soft.

Completely delicious.
